Espresso Caramel Bars for Yo’ Mamma!

Espresso Caramel Bars

Ingredients
Crust:

Vegetable cooking spray
12 whole (6 ounces) cinnamon graham crackers, crumbled or 2 cups cinnamon graham cracker crumbs
1/4 cup sugar
1 1/2 sticks (6 ounces) unsalted butter, melted

Caramel:

1/2 cup heavy cream
1 stick (4 ounces) unsalted butter, at room temperature
1 1/2 cups light brown sugar
1 tablespoon water

Chocolate Layer:

2 cups (12 ounces) semisweet chocolate chips
1/2 cup heavy cream
1 3/4 teaspoons instant espresso powder
1 teaspoon smoked sea salt, optional

Special equipment: a candy thermometer

Directions
For the crust:

Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Line the bottom of a 9-inch round springform pan with parchment or waxed paper. Spray the paper and the sides of the pan with cooking spray. In the bowl of a food processor, combine the graham crackers and sugar. Process until the mixture resembles fine bread crumbs. Add the melted butter and blend until the mixture forms into clumps. Spread the mixture into the bottom of the prepared pan, pressing gently to form an even layer. Place the pan on a baking sheet and bake for 10 to 12 minutes until the crust is golden. Cool for 15 minutes.

For the caramel:

While the crust is cooling, in a medium heavy-bottomed saucepan, combine 1/2 cup of cream, butter, sugar, and water. Stir over medium heat until the mixture is smooth. Bring the mixture to a boil and cook, without stirring, until a candy thermometer registers 240 degrees F, about 5 to 7 minutes. Carefully pour the caramel over the warm crust. Cool for 20 minutes. Freeze until firm, about 10 minutes.

For the chocolate layer:

Combine the chocolate chips and cream in a small bowl and place over a pan of simmering water. Stir until the chocolate has melted and the mixture is smooth, about 3 minutes. Whisk in the espresso powder. Remove the springform pan from the freezer. Pour the chocolate mixture over the caramel layer and smooth with a spatula. Sprinkle the top with smoked sea salt, if using. Refrigerate for at least 1 hour until firm.

Allow the layers to come to room temperature, about 30 minutes. Using a warm, slightly wet knife, carefully cut around the edges of the chocolate layer. Release the side of the pan and remove the paper from the bottom. Cut into 1 1/2 by 1/2-inch bars and store airtight in a covered plastic container.

Organized by Scott Massey, Jonathan Sandridge, and Matthew Lindauer it’s 42 pages of graphics, photographs, screenprints and more, made from everyday art, by international artists, and synthesized into a downloadable eZine to share with the world.

Interview with the Roxy Grom Riders

Hey guys!  I was able to catch up with ROXY Grom riders, Kirby Kelly (13) and Ty Walker (12), at the ROXY Chicken Jam to find out what it’s like to compete at such a young age.  These girls might look small but they can really rip it on the slopes- not to mention they have out-of-this-world personalities too!  They’re girls you just want to be around!  Check ‘em out:

How’s it being here at the RCJ?
KK: It’s really fun –it’s my first year here, just excited to be here
TW: I’m stoked to be here- it’s awesome

How’s it feel to be so young and compete with girls a lot older than you?
KK: It’s pretty cool, I know I’m going to catch up to them soon

Are there any older girls that you look up to, or who inspires you?
KK: Torah Bright, she’s so cool and so good at snowboarding

Do you have any advice for younger girls that want to be more involved in snowboarding or ride professional?
KK: Don’t be embarrassed to be out there with all the guys, because that’s how I was.  Just go for it!
TW: Practice as much as your can because once you’re done with the bruises from your first few days it’s really really fun to get out there

How would you describe your style or what’s your favorite trick?
KK: My favorite trick is back 5 in pipe, I just like stomping it and right away it feels so good.
TW: My style is more laid back

How’s it feel to be a grom on the ROXY Team?
KK: It’s so cool- being here and meeting everyone else who rides for ROXY.  I don’t see them all very much because I’m all the way in Illinois
TW: I don’t even know my favorite part.  It’s so cool and so nice- we all just like to get out there and ride to show off our different styles

Do you girls have a little healthy competition going on between the two of you?
KK: Yea, Ty’s super good at Slopestyle and my strength is Pipe so we definitely push each other
TW: A little bit, Kirby’s strength is more Pipe, and mine’s more Slopes- so it’s more helping each other than really a competition between the two of us

2009 Coachella Fashion Street Style

The street style at Coachella this weekend was so cool…lots of fedoras, high waisted shorts, feathers as accessories, neon, and rawhide fringe covering everything from moccasins to gladiator sandals.

Festival fashion went hand-in-hand with the music during this three day long musical extravaganza.

Daisy O’Dell’s Take on Coachella

I don’t know about you, but I am getting soooo excited for Coachella. Daisy O’Dell is on her way to the desert as we speak. She’s going to be djing at two different parties. Below is a little note from Daisy:

My first Coachella Music Festival was Spring of 2005. I drove to Indio with some friends to watch Radiohead, The Pixies, Kraftwerk, The Flaming Lips, Air (and many more) preform. I have not missed a Coachella since. Music had always played a major role in my life and for as long as I can remember I’ve loved going to festivals, relishing the opportunity to see some of my favorite artists in the same place at the same time. I’ve been attending festivals like Glastonbury and Lollapalooza since my early teens, but Coachella will always remain my favorite way to bring in the summertime.

The line up this year, like many Coachellas past, is outstanding. The perfect mix of current and upcoming talent with all time favorites and established acts. I decided to make a mix exclusively featuring music from the festival’s 2009 bill. Every artist in this mix (including the remixers) will be performing at the Coachella Festival April 17-19th. I didn’t realize how ambitious this undertaking was until I showed up at Resident Lab Studio re-mastered the songs, and attempted to mix Public Enemy and Leonard Cohen with M.A.N.D.Y. and Paul McCartney. Making an eclectic mix required some major editing, but was really fun to produce.  I hope you enjoy listening to it as much as I enjoyed making it and that it captures some of the Daiseyodellcoahcella_4magic that is the Coachella Music Festival. One word of advice, for those of you heading to Coachella this year: Please wear sunscreen and don’t forget to hydrate!

Wild Wetsuits in Teen Vogue and Women’s Health!

The other day, I wrote about the awesome editorial coverage Roxy had in Elle.  Well, wetsuits must be wildly popular this season as I’m back to share more great Roxy placements in the May issues of Teen Vogue and Women’s Health. 

Teen Vogue rocked Roxy this month by splashing wetsuit credits all over the pages of their futuristic surf spread entitled "Wave Riders". These surfer-inspired looks created by Fashion Editor Nancy Rohde perfectly reflect how to go from the sand to the city.

Branded as "sexy surf gear", another custom-made Roxy wetsuit vest found it’s way into the May Issue of Women’s Health.  Thanks to editors over there, we are seeing how traditional wetsuit items can be donned every day!
